AT LAST! For the last few weeks, I’ve been spending a lot of time perfecting my non-dairy caramel recipe and I’ve finally done it! I’ve created a chocolate covered caramel with absolutely no dairy that is creamy and delicious. So I decided I should share my caramels with the world and I hope you enjoy them as much as I do! CARA-MEL’S by Kitchen Tested will be launching in just a few weeks but in the meantime, I thought I could show you what I’ve been up to. Continue reading
I’m not even sure what to say about this recipe! Lots of peeling. Lots of slicing. And lots of boiling. Was it all worth it? Sure. Would I do it again? Sure…if someone wants to prepare the peels for me! I felt like I was cutting and slicing lime peels forever but I’m happy to say that I didn’t cut my fingers at all. Can you imagine the lime juice in a fresh wound. Ouch! If candying citrus peels is on your list of things to do, I say go for it! But I have to warn you that it is definitely a timely process and you will need to wash quite a few dishes when it’s all over. Even though the process of candying the peels was tedious, I always say to try everything twice so I might just have to try candying another citrus peel again sometime. Maybe etrog peels after Succot. We shall see… Continue reading
Okay, so I promise to have a full step-by-step recipe on Kitchen Tested soon (I’m baking delicious doughnuts as we speak), but in the meantime you can check out my latest recipe, Triple Peppermint Chocolate Brownies, on This American Bite!
If you’re from the East Coast, it’s very possible you have no idea what a Red Vine is (if you do, I’m sorry for making the assumption about you). I’ll give you a chance to guess before I change your taste buds forever…did you guess yet?…no?…okay, I’ll tell you! A Red Vine is the ultimate chewy red licorice! Sure, you might now be saying to yourself “I eat Twizzlers and they are delicious,” but I’m here to tell you that Twizzlers have nothing on Red Vines! Here are my favorite things about Red Vines: they are chewy and not waxy like Twizzlers, they can be an instant yummy straw when you bite off the ends and they taste so good when they get really hard and stale! If you think I’m the only one obsessed with Red Vines, I once read a great quote from a fellow Red Vine lover: “No comparison, red vines rule. Twizzlers taste like wax. If you want flavor, Red Vines are the way to go. If you want a mouth full of wax, chew on a birthday candle and save your money.”
So it was a no-brainer to use Red Vines when my I decided to alter a recipe that my sister sent me for Chocolate Cherry Cola Cupcakes with Red Licorice Filling from a 2010 episode of Cupcake Wars on the Food Network. Please please please do not use Twizzlers in place of Red Vines! Just check out the “WHERE TO FIND RED VINES” tab on Red Vines official website and pick up a bag (or two). Continue reading
I’m your basic chocolate lover! I love to eat and bake sweet chocolate desserts like chocolate chip cookies, brownies and ganache and sometimes, I even experiment with savory chocolate dishes like chili and pasta. So when I saw that Breezy’s, my favorite baking supply store, offered a class where I could learn how to take my chocolate obsession to the next level, I was in! After a long day with my son home sick from school, it was such a pleasure to go to Breezy’s for the Chocolate Galore class with instructor Robin Muchnick. When I got there, I was pleasantly surprised to find an organized set up of silicone molds, transfer sheets, bowls of colored sugar and sparkle, and other exciting treats that I would soon be filling and covering with chocolate. Just remember that the chocolate tips I’m going to share with you don’t even cover half of what you can learn when you actually take the class, but they will give you a taste (no pun intended). Congratulations to Sara DeLeeuw, author of blog My Imperfect Kitchen and this weeks Feature Friday winner for her incredible P.B.K. Brownies. I have already made these brownies and could not stop eating them! If you would like to be features on KT, it’s as easy as submitting a recipe here.
We started our third bowling season last night. It has become something of a tradition for me to bring snacks to our weekly games. Truthfully, I do it because I can’t bowl. Not even remotely well. I couldn’t break 100 if I used bumpers. My scores last night were 77, 79 and 69. Yeahhhh…don’t quit my day job, right? You may feel sorry for my team, but don’t! They eat very well. Yesterday I made PBK (Peanut Butter Krispy) Brownie Bars to kick off our season. This recipe is a variation of BrownEyedBaker’s “Better Than Crack” Brownies and they are very addicting! After all, who doesn’t love chocolate and peanut butter? Consider yourself warned, you may never go back to regular brownies again. I’m setting the bar pretty high on bowling snacks with these! They are easy to put together, and trust me, they are worth every delicious bite! Continue reading
