AT LAST! For the last few weeks, I’ve been spending a lot of time perfecting my non-dairy caramel recipe and I’ve finally done it! I’ve created a chocolate covered caramel with absolutely no dairy that is creamy and delicious. So I decided I should share my caramels with the world and I hope you enjoy them as much as I do! I’m not even sure what to say about this recipe! Lots of peeling. Lots of slicing. And lots of boiling. Was it all worth it? Sure. Would I do it again? Sure…if someone wants to prepare the peels for me! I felt like I was cutting and slicing lime peels forever but I’m happy to say that I didn’t cut my fingers at all. Can you imagine the lime juice in a fresh wound. Ouch! If candying citrus peels is on your list of things to do, I say go for it! But I have to warn you that it is definitely a timely process and you will need to wash quite a few dishes when it’s all over. Even though the process of candying the peels was tedious, I always say to try everything twice so I might just have to try candying another citrus peel again sometime. You would think I’d be all fried out by now, considering all of the latkes and sufganiyot I’ve been surrounded with (and eating) this holiday season. Yeah, I baked my own doughnuts but that doesn’t mean everyone else didn’t choose to fry up their own. So when I made another batch of baked doughnuts for the weekend, I decided it was time to heat up a pot of oil and get frying with the leftover scraps of dough! And this couldn’t have been a better time to test out my new pipette’s from my favorite housewares and baking accessory shop, Breezy’s. I’ve only ever seen pipette’s used on television and when I had the chance to use them in my own kitchen, I jumped at the chance. So there I stood in my kitchen with extra scraps of doughnut dough to fry and pipette’s to fill and it just all made sense…peanut butter caramel doughnut holes with tart jelly! I already had the luscious salted peanut butter caramel in my fridge from the Pecan Apple Galette I made last week and I always have some kind of jelly or preserve in my pantry. These biscotti are my go-to for an easy (yet semi-elegant) dessert for parties. Even if you don’t like coconut, as long as you like almonds you will LOVE these cookies (the coconut flavor is completely hidden – I promise). I use sweetened shredded coconut but I’m sure the cookies taste delicious with the unsweetened kind as well.
