Delicious CARA-MEL’S

AT LAST! For the last few weeks, I’ve been spending a lot of time perfecting my non-dairy caramel recipe and I’ve finally done it! I’ve created a chocolate covered caramel with absolutely no dairy that is creamy and delicious. So I decided I should share my caramels with the world and I hope you enjoy them as much as I do! Candied Lime Peels

I’m not even sure what to say about this recipe! Lots of peeling. Lots of slicing. And lots of boiling. Was it all worth it? Sure. Would I do it again? Sure…if someone wants to prepare the peels for me! I felt like I was cutting and slicing lime peels forever but I’m happy to say that I didn’t cut my fingers at all. Can you imagine the lime juice in a fresh wound. Ouch! If candying citrus peels is on your list of things to do, I say go for it! But I have to warn you that it is definitely a timely process and you will need to wash quite a few dishes when it’s all over. Even though the process of candying the peels was tedious, I always say to try everything twice so I might just have to try candying another citrus peel again sometime. Maybe etrog peels after Succot. We shall see… Continue reading

Cornbread Whoopie Pies

I love whoopie pies of all flavors and colors; chocolate, pumpkin, maple, oatmeal, peanut butter, chocolate chip, etc. If you can think it up, I will eat it! But I’ve never had a savory whoopie pie before and it’s been on my to-do list for a while. Cornbread seemed to make the most sense for the cake but if you have any other ideas, please share! You’ll notice below that I decided to use a non-dairy cream cheese. Instead of making the whoopie pies dairy, I chose to add delicious Mexican Style Chorizo in the filling. I just love jalapeno cornbread with sausage and each bite was the perfect mix. Continue reading

Peppermint Sandwich Kisses

While doing some recipe research for inspiration, I came across a few recipes for kiss cookies and I was immediately intrigued. Not only had I never tasted a kiss cookie, but I’d never even heard of it! These soft and crumbly cookies that you can just pop in your mouth looked too good to be true and I had to give them a try. Conveniently, a friend of mine (shout out to Yonina Wind) asked me to bake something for an event she will be attending and I jumped at the opportunity just so I could make these cookies! Wow, that sounds kind of selfish, huh?!? I should have said that I was so happy to bake for her and already had the perfect recipe in mind. Either way, I made the cookies…and they were even better than I expected. Instead of just making a plain kiss cookie, I found inspiration in one of my favorite candies; the York Peppermint Patty. I sandwiched silky smooth melted chocolate between two teeny tiny peppermint green cookies and voila! Peppermint Sandwich Kisses! Enjoy. Oh, and if you (or anyone around you) are allergic to eggs, these cookies are perfect for you since there are no eggs anywhere in this recipe! Continue reading

Dark Spiced Hot Chocolate

I’m very excited to introduce this guest post from Avital Greenbaum, a fellow blogger, Registered Dietitian and friend. Her blog, A Slice of Nutrition, is all about helping the average person add healthy choices into the daily routine. Winter is here and that means we’ll soon enjoy sledding, furry boots, and snowmen. Unfortunately, the cold weather also brings shoveling, icy roads, and frostbitten fingers. Deconstructed Peanut Butter & Jelly Doughnuts

You would think I’d be all fried out by now, considering all of the latkes and sufganiyot I’ve been surrounded with (and eating) this holiday season. Yeah, I baked my own doughnuts but that doesn’t mean everyone else didn’t choose to fry up their own. So when I made another batch of baked doughnuts for the weekend, I decided it was time to heat up a pot of oil and get frying with the leftover scraps of dough! And this couldn’t have been a better time to test out my new pipette’s from my favorite housewares and baking accessory shop, Breezy’s. I’ve only ever seen pipette’s used on television and when I had the chance to use them in my own kitchen, I jumped at the chance. So there I stood in my kitchen with extra scraps of doughnut dough to fry and pipette’s to fill and it just all made sense…peanut butter caramel doughnut holes with tart jelly! I already had the luscious salted peanut butter caramel in my fridge from the Pecan Apple Galette I made last week and I always have some kind of jelly or preserve in my pantry. Chocolate Chip Almond Biscotti {Feature Friday}

These biscotti are my go-to for an easy (yet semi-elegant) dessert for parties. Even if you don’t like coconut, as long as you like almonds you will LOVE these cookies (the coconut flavor is completely hidden – I promise). I use sweetened shredded coconut but I’m sure the cookies taste delicious with the unsweetened kind as well. I recently baked these cookies for my company’s holiday potluck and they were gone within minutes! Continue reading
