I love whoopie pies of all flavors and colors; chocolate, pumpkin, maple, oatmeal, peanut butter, chocolate chip, etc. If you can think it up, I will eat it! But I’ve never had a savory whoopie pie before and it’s been on my to-do list for a while. Cornbread seemed to make the most sense for the cake but if you have any other ideas, please share! You’ll notice below that I decided to use a non-dairy cream cheese. Instead of making the whoopie pies dairy, I chose to add delicious Mexican Style Chorizo in the filling. I hear you asking yourselves “What is a MozzArepa? And why does it look so tasty?” After my sister-in-law, Erica, asked me to make the frickles, she didn’t come to me with any other interesting recipes. She certainly enjoyed the fruits of my labor, but I was waiting for her to come up with another crazy idea. Well, after I made my rainbow layer cake, Erica was inspired to call me up with a new recipe, and boy did she come up with something great! The story goes that she was hanging out with her friend, Romel, at a street fair when he practically stopped in his tracks at seeing the MozzArepa cart. The line was long but that didn’t matter. Romel would get his MozzArepa! Erica could do nothing but watch as he savored the non-kosher fresh corn cakes packed with mozzarella. I guess this happens every time the two best friends hang out at a street fair and Erica had enough with not being able to try the Mozzarepa herself. So she came to me for help and I was more than happy to oblige.
I never really thought Olive Oil cake sounded so appetizing as a dessert, but it all really works! The grapes taste almost like plums (one of my favorites) and the cake is moist and crumbly. I figured if my initial feeling was to avoid this Martha Stewart recipe, I just had to try it out. I mean, it is Martha Stewart, right?!? How can it be bad! My favorite part about this cake was my son calling the grapes “eyes.” He picked them all out and actually left the cake behind. Good boy. Continue reading
