Cornbread Whoopie Pies

I love whoopie pies of all flavors and colors; chocolate, pumpkin, maple, oatmeal, peanut butter, chocolate chip, etc. If you can think it up, I will eat it! But I’ve never had a savory whoopie pie before and it’s been on my to-do list for a while. Cornbread seemed to make the most sense for the cake but if you have any other ideas, please share! You’ll notice below that I decided to use a non-dairy cream cheese. Instead of making the whoopie pies dairy, I chose to add delicious Mexican Style Chorizo in the filling. Potato Chorizo Tacos with Avocado Salsa

I am absolutely in LOVE with Jacks Gourmet Sausages and the Mexican Style Chorizo is no exception! This spicy fatty sausage is packed with so many delicious spices, such as garlic, paprika, chili pepper and red peppers. Every bite takes a you on a unique journey like no other kosher sausage can give you and I suggest you run out right now (well, wait until you’re done reading this recipe) to buy your own package. In fact, I think you should buy one of every flavor and try them all. The Hot Italian is my second favorite! I’ve cooked the sausages in so many different ways by adding them to a chili or even just sticking them in a hot dog bun, but my new favorite recipe was inspired by Rick Bayless‘ Potato Chorizo Tacos with Avocado Salsa. Candied Jalapenos

Candied Jalapenos. Yum! I don’t even need to say anything else about this recipe. “Yum” really covers it. If you love the flavor of a fresh crunchy jalapeno, this “Cowboy Candy” will certainly appeal to you. The balance of sweet, savory and spicy flavors meld together to create the perfect condiment for just about anything. I would even put it on ice cream! Tuna and Watermelon Ceviche

We don’t have a printer in our house. I know that sounds strange, but Justin works only a few minutes away so if we need something printed, it gets done at the office. Don’t worry…we plan to buy a printer at some point, but we just keep pushing it off. So I sent Justin an email asking him to print a few recipes and when he came home after work, he handed me a stack of paper with his own addition right on top: Tuna and Watermelon Ceviche. I know that watermelon is all over television and the blogs these days, but that doesn’t mean this recipe isn’t worth trying here.
