Veal and Leek Pot Pie

26 Oct

I absolutely love pot pies! I grew up eating those delicious frozen ones with chicken, peas and carrots but it’s been a long time since I’ve enjoyed that creamy filling and crunchy pastry crust. Then the other night, on ABC’s Modern Family, Cameron and Mitchell would not stop discussing the pot pies at their favorite restaurant and I just had to have one! Since the frozen pies of my childhood were beyond fattening, I figured I could just make my own delicious and healthy version. What a treat! I decided to use veal because it’s salty, delicious and extremely healthful, but you can use chicken or turkey as well. Even leftover meat or poultry will be great in this dish.   Continue reading

Brown Sugar Ice Cream with Candied Pecans

4 Aug

I just bought an ice cream maker and I’m not afraid to use it! So what should my first flavor be??? I got a lot of ideas from the mob but nothing looked better than brown sugar ice cream with homemade candied pecans. It’s a flavor I’ve never had before and it just sounds delicious. And to shake things up a little, my version isn’t even dairy! But don’t worry, you won’t even know that the milk and cream are missing. And to make the whole process even better, you will definitely have extra candied pecans to snack on every day. Mmmm…candied pecans. Yum! You’ll see! Continue reading

Rainbow Layer Birthday Cake

3 May

Happy birthday to me!!! Yes, I made my own birthday cake. I am now 28 years old and making my own cake. I could have asked my husband to make it for me, but I’m not sure that would have worked out too well. And my pastry chef sister lives across the country in Seattle, so that option was out. So I guess I figured I could just make it myself. In fact, two months ago, my friend (Gina Masri…thanks!) sent me a link to this Martha Stewart recipe and right then and there, I knew that I wanted to make it for my own birthday. I’ve been counting down to this moment and here it is! I get to have a fun birthday with presents and family (gotta love my priorities) AND I get to make a crazy rainbow cake. Does life get any better?!? Continue reading

Homemade S’mores Pop Tarts

25 Mar

So many of my childhood memories are food related! One of those memories is making microwaved s’mores for dessert after dinner, and then making seconds when my parents left the kitchen. I would layer tons of chocolate chips and marshmallows on the graham crackers then watch the ‘mallows grow in the microwave then deflate. So much fun to watch! And yes, I used to eat food behind my parents backs! Is that one of the symptoms of a food addict? I also used to snack on nachos while no one was watching, but that story is for another time. So when I found this recipe for s’mores pop tarts, it reminded me of being a kid and I knew I had to try it right away. I mean, I literally went grocery shopping the day after I found this recipe and bought all of the ingredients. Get ready for the sweet goodness of s’mores and pop tarts, all homemade and delicious.
